Cranberry and Walnut Cookies

Ingredients : -

All-purpose flour        4 cups
Sugar        1 cup
Eggs        4
Butter        1-3/4 cups
Baking powder        2 tsps
Cranberry        1-1/2 cups
Walnut, chopped        2 cups
Vanilla extract        1 tsp

Directions: -

1.        In a mixing bowl beat sugar and butter (room temperature) together until fluffy then add vanilla extract, eggs (one by one) and flour. Mix them well.
2.        Add in the cranberry and walnut to form a medium soft dough. Add a few drops of water if required.
3.        Divide the dough in to four portions and wrap them with plastic wrap in the shape of a rolling pin. Put them in the refrigerator and chill for a couple of hours until firm.
4.        Before baking bring them out and cut them into discs of around 5 mm thickness. Bake in a pre-heated oven of 350C for 20 to 22 minutes until golden brown.
